Pina Colada Smoothie
1 cup frozen pineapple chunks
½ cup lite coconut milk (mix well after opening can)
1 tablespoon shredded coconut
1 drop coconut extract
3 to 5 ice cubes

1. Combine all ingredients in a blender until smooth and frothy. Add a drop more milk if needed.
To Make Ice Pops:
Pour smoothie into standard ice pop molds and freeze for at least 6 hours, or overnight.
